Italian hunter-style chicken in a rich tomato sauce with peppers, olives, and herbs.
Ingredients
- 6 chicken thighs (bone-in, skin on)
- 1 onion, sliced
- 3 cloves garlic, crushed
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 150g mushrooms, sliced
- 400g tin chopped tomatoes
- 100ml red wine (or chicken stock)
- 2 tbsp tomato puree
- 1 tsp dried oregano
- 1 tsp dried basil
- Handful of black olives
- Salt and pepper
Method
- If possible, brown the chicken thighs skin-side down in a hot pan.
- Place the onion, garlic, peppers, and mushrooms in the slow cooker.
- Sit the chicken on top.
- Mix the tomatoes, wine, tomato puree, and herbs. Pour over the chicken.
- Cook on Low for 6-8 hours.
- Add the olives in the last 30 minutes.
- Serve with pasta or crusty bread.
Tips
The bone-in thighs stay incredibly juicy. Browning the skin first adds great flavour.
