Ingredients
- 2 lamb shanks
- 1 onion, diced
- 3 cloves garlic, crushed
- 2 carrots, chunked
- 200ml red wine
- 200ml lamb or beef stock
- 400g tin chopped tomatoes
- 2 tbsp tomato puree
- 1 sprig rosemary
- 2 bay leaves
- Salt and pepper
Method
- Season the lamb shanks and brown in a hot pan on all sides if possible.
- Place the onion, garlic, and carrots in the slow cooker.
- Sit the lamb shanks on top.
- Pour in the wine, stock, and tinned tomatoes. Add the tomato puree, rosemary, and bay leaves.
- Cook on Low for 8-10 hours until the meat is falling off the bone.
- Remove the rosemary sprig and bay leaves.
- Serve with creamy mashed potato.
Tips
This is a show-stopper for a date night or special dinner. It looks impressive but takes almost no effort.
