Ingredients
- 2 x 400g tins black beans, drained
- 1 onion, diced
- 3 cloves garlic, crushed
- 1 pepper, diced
- 800ml vegetable stock
- 2 tsp cumin
- 1 tsp smoked paprika
- Juice of 1 lime
- Salt and pepper
Method
- Add everything except lime to slow cooker.
- Cook LOW 6-7 hours.
- Blend half for texture. Squeeze in lime.
- Serve with sour cream and tortilla chips.
Tips
Top with avocado, fresh coriander, and a drizzle of hot sauce.
