Ingredients
- 600g chicken thighs (boneless), cubed
- 1 onion, diced
- 3 cloves garlic, crushed
- 2cm ginger, grated
- 400g tin chopped tomatoes
- 150ml chicken stock
- 2 tbsp tomato puree
- 2 tsp hot chilli powder
- 2 tsp cumin
- 1 tsp turmeric
- 1 tsp garam masala
- 1 tsp mustard seeds
- Salt
- Rice, to serve
Method
- Add chicken, onion, garlic, and ginger to the slow cooker.
- Mix tomatoes, stock, tomato puree, and all spices. Pour over.
- Cook on LOW for 6-7 hours.
- Stir well and season.
- Serve with plain basmati rice to balance the heat.
Tips
Adjust the chilli powder to your tolerance. Start with 1 tsp if you’re unsure and add more at the end.
