Ingredients

  • 600g chicken thighs (boneless), cubed
  • 1 onion, diced
  • 3 cloves garlic, crushed
  • 2cm ginger, grated
  • 400g tin chopped tomatoes
  • 150ml chicken stock
  • 2 tbsp tomato puree
  • 2 tsp hot chilli powder
  • 2 tsp cumin
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp mustard seeds
  • Salt
  • Rice, to serve

Method

  1. Add chicken, onion, garlic, and ginger to the slow cooker.
  2. Mix tomatoes, stock, tomato puree, and all spices. Pour over.
  3. Cook on LOW for 6-7 hours.
  4. Stir well and season.
  5. Serve with plain basmati rice to balance the heat.

Tips

Adjust the chilli powder to your tolerance. Start with 1 tsp if you’re unsure and add more at the end.
