Red Lentil and Carrot Soup

Thick, warming, and incredibly cheap to make. A lunchtime staple in our house.

Ingredients

  • 200g red lentils, rinsed
  • 3 carrots, diced
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 800ml vegetable stock
  • 1 tsp cumin
  • ½ tsp turmeric
  • Salt and pepper
  • Crusty bread, to serve

Method

  1. Add lentils, carrots, onion, and garlic to the slow cooker.
  2. Pour in the stock and add spices.
  3. Cook on LOW for 6-7 hours.
  4. Blend until smooth (or leave chunky).
  5. Season and serve with bread.

Tips

Costs less than a quid for the whole pot. Hard to beat.
