Pea and Mint Soup

Ingredients

  • 500g frozen peas
  • 1 onion, diced
  • 1 potato, cubed
  • 600ml vegetable stock
  • Handful fresh mint
  • 100ml cream
  • Salt and pepper

Method

  1. Add peas, onion, and potato to slow cooker.
  2. Pour over stock.
  3. Cook LOW 4 hours.
  4. Add mint and blend smooth.
  5. Stir in cream. Season and serve.

Tips

Frozen peas work best and are cheaper than fresh.
