Ingredients
- 500g frozen peas
- 1 onion, diced
- 1 potato, cubed
- 600ml vegetable stock
- Handful fresh mint
- 100ml cream
- Salt and pepper
Method
- Add peas, onion, and potato to slow cooker.
- Pour over stock.
- Cook LOW 4 hours.
- Add mint and blend smooth.
- Stir in cream. Season and serve.
Tips
Frozen peas work best and are cheaper than fresh.
