Ingredients
- 250g red lentils, rinsed
- 1 onion, diced
- 3 cloves garlic, crushed
- 2cm ginger, grated
- 400g tin chopped tomatoes
- 400ml vegetable stock
- 200ml coconut milk
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp garam masala
- ½ tsp chilli powder
- Salt
- Fresh coriander and rice, to serve
Method
- Add the lentils, onion, garlic, and ginger to the slow cooker.
- Pour in the tomatoes, stock, and coconut milk.
- Add the turmeric, cumin, garam masala, and chilli powder. Stir.
- Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
- The lentils will break down into a thick, creamy dhal. Stir well.
- Season with salt. Serve over rice with fresh coriander.
Tips
For a tarka finish, heat oil in a small pan and fry cumin seeds, mustard seeds, and dried chilli flakes. Pour over the dhal just before serving.
