Sausage and Bean Stew

A one-pot wonder with sausages, mixed beans, and a smoky tomato sauce. Cheap, cheerful, and totally delicious.

Ingredients

  • 8 pork sausages
  • 400g tin mixed beans, drained
  • 400g tin chopped tomatoes
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 1 pepper, diced
  • 200ml chicken stock
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1 tbsp tomato puree
  • Salt and pepper
  • Crusty bread, to serve

Method

  1. Brown the sausages quickly in a pan.
  2. Add everything to the slow cooker and stir.
  3. Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  4. Serve with crusty bread for mopping up the sauce.

Tips

Swap pork sausages for veggie sausages to make this vegetarian.
