Slow Cooker Vegetable Ragù

Ingredients

  • 2 courgettes, diced
  • 1 aubergine, diced
  • 2 peppers, diced
  • 1 onion, diced
  • 3 cloves garlic, crushed
  • 2 x 400g tins chopped tomatoes
  • 2 tbsp tomato puree
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp sugar
  • Salt and pepper

Method

  1. Add all vegetables to the slow cooker.
  2. Mix tomatoes, puree, herbs, sugar, and seasoning. Pour over.
  3. Cook LOW 6-7 hours.
  4. Use as a base for lasagne, pasta, or on its own with bread.

Tips

Layer with béchamel and lasagne sheets, bake at 190°C for 30 minutes for a veggie lasagne.
