Ingredients
- 2 courgettes, diced
- 1 aubergine, diced
- 2 peppers, diced
- 1 onion, diced
- 3 cloves garlic, crushed
- 2 x 400g tins chopped tomatoes
- 2 tbsp tomato puree
- 1 tsp oregano
- 1 tsp basil
- 1 tsp sugar
- Salt and pepper
Method
- Add all vegetables to the slow cooker.
- Mix tomatoes, puree, herbs, sugar, and seasoning. Pour over.
- Cook LOW 6-7 hours.
- Use as a base for lasagne, pasta, or on its own with bread.
Tips
Layer with béchamel and lasagne sheets, bake at 190°C for 30 minutes for a veggie lasagne.
