Ingredients
- 2 carrots, diced
- 2 potatoes, diced
- 1 parsnip, diced
- 1 onion, diced
- 2 sticks celery, sliced
- 1 leek, sliced
- 2 cloves garlic, crushed
- 400g tin chopped tomatoes
- 800ml vegetable stock
- 1 tsp mixed herbs
- 1 bay leaf
- Salt and pepper
Method
- Add all the prepared vegetables to the slow cooker.
- Pour in the tomatoes and stock.
- Add the herbs, bay leaf, and seasoning.
- Cook on LOW for 6-7 hours.
- Remove the bay leaf. For a smoother soup, blend half and stir back in.
- Season to taste and serve with crusty bread.
Tips
This is a great recipe for using up odds and ends. Throw in whatever veg needs using — swede, turnip, cabbage, beans, whatever you’ve got.
