Chunky Vegetable Soup

A big pot of goodness using whatever veg you have. The slow cooker brings out all the sweetness.

Ingredients

  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 parsnip, diced
  • 1 onion, diced
  • 2 sticks celery, sliced
  • 1 leek, sliced
  • 2 cloves garlic, crushed
  • 400g tin chopped tomatoes
  • 800ml vegetable stock
  • 1 tsp mixed herbs
  • 1 bay leaf
  • Salt and pepper

Method

  1. Add all the prepared vegetables to the slow cooker.
  2. Pour in the tomatoes and stock.
  3. Add the herbs, bay leaf, and seasoning.
  4. Cook on LOW for 6-7 hours.
  5. Remove the bay leaf. For a smoother soup, blend half and stir back in.
  6. Season to taste and serve with crusty bread.

Tips

This is a great recipe for using up odds and ends. Throw in whatever veg needs using — swede, turnip, cabbage, beans, whatever you’ve got.
