Ingredients
- 175g self-raising flour
- 100g soft dark brown sugar
- 100g dates, chopped
- 50g melted butter
- 1 egg
- 150ml boiling water
- 1 tsp bicarbonate of soda
- 1 tsp vanilla extract
- For the sauce:
- 100g butter
- 150g dark brown sugar
- 200ml double cream
Method
- Soak the dates in the boiling water with the bicarbonate of soda for 10 minutes.
- Mix the flour, sugar, melted butter, egg, and vanilla.
- Stir in the date mixture.
- Pour into a greased slow cooker or a pudding basin that fits inside your slow cooker.
- Cook on High for 2-3 hours until a skewer comes out clean.
- Make the sauce: melt butter and sugar in a pan, stir in the cream, and simmer for 3 minutes.
- Turn out the pudding and drench with toffee sauce. Serve with cream or ice cream.
Tips
Use Medjool dates if you can afford them — they’re softer and sweeter. Regular supermarket chopped dates work perfectly too.
