Ingredients
- 1 whole chicken (about 1.5kg)
- 1 onion, quartered
- 4 cloves garlic, whole
- 2 carrots, chunked
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tbsp olive oil
- Salt and pepper
Method
- Mix the paprika, garlic powder, thyme, oregano, oil, salt, and pepper into a paste. Rub all over the chicken.
- Place the onion, garlic, and carrots in the bottom of the slow cooker.
- Sit the chicken on top of the vegetables.
- Cook on Low for 8 hours or High for 5-6 hours.
- The chicken is done when the juices run clear and the legs pull away easily.
- If you want crispy skin, pop under a hot grill for 5 minutes before serving.
Tips
The slow cooker won’t crisp the skin, but the meat will be incredibly juicy. A quick blast under the grill sorts the skin out.
